Hop you IPA 7%

Below is the recipe for the IPA that got a the first place at the London and Southeast home brew competition a couple of weekends back (09/11/13). It scored 51/60, which i have equated to a low 40 point BJCP beer.

Recipe is for a 55L batch end of boil – losing 3L to boil hops, 6L to whirlpool hops and plate chiller and the loosing 5L to dry hopping – giving just over 40L into kegs.

Water Treatment – reduced carbonate/bicarbonate level using phosphoric acid and Burtonised
Mashed at 65C mash out at 74 and sparge at 74.
30min whirlpool
Yeast – Re-hydrated us-05
Cooled to 17C pitched yeast held at 17C for 48 hours, let temp rise to 19C for 48 hours then raised to 21C till FG was achieved (7 days in all till FG was acheived).
Once FG was achieved dropped to 18C dumped yeast and dryhopped at 18C for 3 days.
After 3 days dryhopping crashed to 2dec for 4 days and then keged with gelatin and force carbonated – it was drink able the next day.
Brewday to competition was less than 3 weeks, beer was drinkable in 15-16 days

Hopping: Non isomerised hop extract was used for bittering (along with 100g of Columbus pellets) 20ml which equates to about 100ibu – This stuff is amazing, pure bitterness, its very popular in US craft breweries like Russian River and Stone and the likes. I use it so i don’t have to use 300-400g of high alpha hops at the start of a 90 min boil, that and the bitterness is a lot smoother and pleasant on the palette. all other additions were pellets.
